“Betters, is it?” The noisome presence of Daft Josie hobbled into the room. “Little slut- I was as good as ye once. I knew yer father, I did.” she added, pointing a grimy finger at Jack, now putting Marietta off his lap. “ye have t’look o’him. But,” she added, as the boy climbed to his feet; “Ye’ve not got his statoor.”
“He’s a tall man” Jack agreed gravely. “And will you raise a glass to my father, Josie?”
She took the silver, cackling. “Thankee young’n! Aye, ye be yer old man all over again. Kindly manners ye Spadgers have, I’ll be bound.”
Marietta glowered, and gathered herself against the seaman’s side. Josie grimaced back at her, and stroked a sweetly freckled cheek, gently, with her claw-like thumb. “Ah little missie, ye’ve some lovely times ahead, w’yer pretty face.”
“Take yer hands away fro’ me, ye old bitch” Marietta muttered, but her haughty attitude ebbed away a little.

See, the joke here is- that Johnny is trying very hard to get Keith Richards to play Sparrow’s dad, in one of the future films. And no one knows for sure if he’ll be able to do it. So, once in a while, Jack’s missing dad will get mentioned.
But, I looked up Richards”s height. It’s 5’10″ which is exactly the statoor of Depp. But the lines are so good, I think I’ll leave them in. So there. besides, Johnny plays Jack as a small man.
I love Josie’s kindness towards the pretty chit.
